  • 3.4 ounces instant lemon pudding

  • ¾ cup frozen lemonade concentrate
  • 1 ½ cups fresh blueberries
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F. Spray an 8×8 baking dish with non-stick spray.
  2. Combine light brown sugar, flour, chopped pecans, and melted butter in a bowl. Press the mixture into the bottom of the baking dish and bake for 15 minutes until golden brown. Let cool.
  3. In another bowl, mix evaporated milk and instant lemon pudding until thickened. In a separate bowl, beat cream cheese until fluffy and gradually add frozen lemonade concentrate. Fold in the pudding mixture and spread over the cooled crust.
  4. For the topping, combine blueberries, granulated sugar, lemon juice, and cornstarch in a saucepan over medium heat. Cook until thickened (about 5–7 minutes), then let cool before pouring over the filling.
