  • 4 tablespoons unsalted butter
  • 2 large egg yolks
  • ½ cup heavy cream
  • 1 teaspoon salt

  • ½ cup grated Parmesan cheese (optional)

Instructions

  1. Cook cubed russet potatoes in salted water until fork-tender, about 15–20 minutes. Drain and steam dry.
  2. Mash the cooked potatoes in a mixing bowl until smooth. Stir in butter, egg yolks, heavy cream, salt, black pepper, nutmeg, and optional Parmesan cheese.
  3. Preheat oven to 425°F (220°C). Pipe the potato mixture into rosettes on a parchment-lined baking sheet using a piping bag fitted with a star tip.
