Ingredients
- 2 pounds russet potatoes
- 4 tablespoons unsalted butter
- 2 large egg yolks
- ½ cup heavy cream

Instructions
- Cook cubed russet potatoes in salted water until fork-tender, about 15–20 minutes. Drain and steam dry.
- Mash the cooked potatoes in a mixing bowl until smooth. Stir in butter, egg yolks, heavy cream, salt, black pepper, nutmeg, and optional Parmesan cheese.
