- 1 tablespoon olive oil
- 2 large onions, thinly sliced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 cups beef broth
- 1 cup dry red wine (or additional beef broth)
- 1 cup Gruyère cheese, shredded
Instructions
- Season beef short ribs with salt and pepper. Heat olive oil in a heavy pot over medium-high heat and sear the ribs until browned on all sides. Remove from pot.
- Add sliced onions to the same pot and caramelize for about 20–25 minutes until golden brown. Stir in minced garlic.
- Deglaze the pot with red wine, scraping browned bits off the bottom, then return short ribs to the pot.
- Add beef broth and bay leaf, bring to a boil. Reduce heat and simmer for 2–3 hours until meat is tender.
- Remove short ribs; shred meat off bones and return to soup. Adjust seasoning as needed.
- Serve topped with toasted French bread and melted Gruyère cheese.
