  • 2 cups powdered sugar (for filling)
  • 2 tablespoons heavy cream (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 1/4 teaspoon ground cinnamon (for filling)
  • 1/4 cup caramel sauce (for drizzle)

Instructions

  1. Prepare the apple cider reduction by boiling 2 cups of cider until reduced to 1/2 cup; let cool.
  2. In one bowl, whisk together flour, baking soda, baking powder, spices, and salt. In another bowl, cream softened butter with sugars until fluffy. Beat in the egg, vanilla extract, cooled cider reduction, and buttermilk.
  3. Combine wet and dry ingredients until just mixed.
  4. Preheat oven to 375°F and line baking sheets with parchment paper. Drop dough onto sheets and bake for 8-10 minutes.
  5. Roll warm cookies in cinnamon sugar coating and cool on a wire rack.
  6. Beat filling ingredients together until fluffy. Assemble whoopie pies by piping filling between cooled cookies.
