  • 1 tablespoon lemon juice
  • 1/2 cup caramel sauce

Instructions

  1. Preheat your oven to 375°F and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt; set aside.
  3. In a large bowl, cream softened butter with granulated and brown sugars until fluffy. Beat in egg and vanilla until combined.
  4. Gradually mix in dry ingredients until just combined to form a soft dough.
  5. For the filling, cook diced apples with sugar, flour, cinnamon, butter, and lemon juice over medium heat until tender and thickened; cool slightly.
  6. Roll cookie dough into 1 1/2-inch balls; place on prepared sheets. Create an indentation in each ball and fill with cooled apple mixture.
  7. Bake for 10-12 minutes until edges are golden; cool for 5 minutes before transferring to a wire rack.
