  • 2 medium butternut squash (about 3 pounds total), peeled, seeded, and thinly sliced into 1/8-inch thick rounds or half-moons
  • 2 tablespoons unsalted butter
  • 1 small yellow onion, minced
  • 2 cloves garlic, minced
  • 2 cups heavy cream
  • 1/2 cup whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon freshly grated nutmeg
  • 1 cup shredded Gruyere cheese, divided
  • 1/2 cup grated Parmesan cheese, divided
  • 810 fresh sage leaves, whole

Instructions

  1. Preheat your oven to 375°F and lightly butter a 9×13 inch baking dish.
  2. In a large saucepan, melt the butter over medium heat. Add minced onion and cook until softened, about 5 minutes. Stir in minced garlic for an additional minute.
  3. Pour in heavy cream and milk, bringing it to a gentle simmer. Reduce heat, then stir in salt, pepper, and nutmeg. Remove from heat and mix in half of the Gruyere and Parmesan cheeses until smooth.
  4. Layer one-third of the sliced butternut squash in the baking dish, followed by one-third of the cream sauce and some cheese. Repeat until all ingredients are used, finishing with cheese on top and tucking sage leaves among the layers.
  5. Cover tightly with foil and bake for 45 minutes. Uncover and bake for another 20-30 minutes until golden brown and bubbly; broil for an extra few minutes if desired.
  6. Let rest for 10 minutes before serving.
