Ingredients
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened (for frosting)
- 2 cups confectioners' sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract (for frosting)
- Green gel food coloring
- 24 edible candy eyes
- 1/4 cup green candy balls (small)
- 2 tablespoons white skull sprinkles
- 12 pretzel sticks, broken in half
Instructions
- Preheat oven to 350°F. Lightly grease a 24-cup mini muffin tin.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy. Beat in the egg and vanilla extract until well combined.
- In a separate medium bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined and a soft dough forms.
- Roll the cookie dough into 24 small balls, about 1 tablespoon each. Place one ball into each cavity of the prepared mini muffin tin. Use a tart tamper or the back of a spoon to press a deep indentation into the center of each cookie ball, forming a cup shape.
- Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft. Remove from the oven and immediately re-press the indentations if they have puffed up. Let the cookie cups cool in the muffin tin for 5 minutes before carefully transferring them to a wire rack to cool completely.
- While the cookie cups cool, prepare the green buttercream frosting. In a large bowl, beat the softened butter with an electric mixer until creamy. Gradually add the confectioners' sugar, mixing on low speed until combined, then increase speed to medium and beat until fluffy. Add the milk, vanilla extract, and a few drops of green gel food coloring. Beat until the frosting is smooth, light, and the desired green color is achieved. Add more food coloring if a deeper green is desired.
- Once the cookie cups are completely cool, transfer the green frosting to a piping bag fitted with a round tip. Pipe a generous swirl of green frosting into each chocolate cookie cup, creating a bubbling cauldron effect.
- Immediately decorate each cauldron cookie with edible candy eyes, green candy balls, and white skull sprinkles. Insert a broken pretzel stick into the frosting of each cookie to represent a stirring stick.
- Serve immediately or store in an airtight container at room temperature for up to 3 days.
