  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Reduce the apple cider by simmering it in a saucepan until it thickens. Let it cool.
  2. Prepare the cheesecake filling by mixing cream cheese, powdered sugar, and vanilla until smooth; refrigerate until firm.
  3. Combine granulated sugar and cinnamon for coating.
  4. Mix dry ingredients (flour, baking soda, cream of tartar, cinnamon, salt) in one bowl and wet ingredients (butter, sugars, egg, reduced cider) in another.
  5. Combine the two mixtures to form a soft dough.
  6. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  7. Form cookie dough around cheesecake filling and roll in cinnamon sugar.
  8. Bake for 9-12 minutes until lightly golden; cool before serving.
