- 1 small sugar pumpkin (3–4 pounds)
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 yellow onion
- 2 cloves garlic
- 14.5 ounces diced tomatoes
- 15 ounces kidney beans
- 1 cup beef broth
- Chili powder
- Cumin
- Smoked paprika
- Cayenne pepper
- Salt
- Black pepper
- 1 cup shredded sharp cheddar cheese
- Sour cream for serving
Instructions
- Preheat the oven to 375°F. Line a baking sheet with parchment paper. Place halved pumpkins cut-side up and roast for 30-40 minutes until tender.
