  • 1 ½ cups granulated sugar
  • ½ cup packed light brown sugar
  • 4 large eggs
  • 1 (15 ounce) can pumpkin puree
  • ½ cup whole milk
  • 2 teaspoons vanilla extract
  • 2 cups (4 sticks) unsalted butter, softened
  • 8 cups powdered sugar
  • 46 tablespoons whole milk
  • 2 teaspoons vanilla extract
  • Orange gel food coloring
  • 1 cup dark chocolate melting wafers
  • ¼ cup light corn syrup
  • Green gel food coloring

Instructions

  1. Preheat oven to 350°F. Grease and flour two 8-inch round cake pans.
  2. Whisk together flour, baking powder, baking soda, spices, and salt in a bowl; set aside.
  3. In another bowl, cream softened butter and sugars until fluffy. Add eggs one at a time, followed by pumpkin puree and vanilla.
  4. Gradually mix in dry ingredients with milk until combined. Divide batter between prepared pans.
  5. Bake for 30-35 minutes or until a skewer comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  6. Melt dark chocolate and mix with corn syrup for modeling chocolate; let cool until firm.
  7. Prepare orange buttercream by beating butter and gradually adding powdered sugar; mix in milk and gel coloring for desired color.
  8. Level cooled cakes and stack them with buttercream in between layers. Carve into a rounded shape resembling a pumpkin.
  9. Frost the cake with remaining orange buttercream; create ridges using an offset spatula.
  10. Shape modeling chocolate into decorations (stem, eyes, mouth) and attach to cake using buttercream as glue.
  11. Pipe green frosting vines around the base.
