  • 2 large sweet potatoes, peeled and thinly sliced into 1/4-inch rounds
  • 1 medium butternut squash, peeled, deseeded, and thinly sliced into 1/4-inch rounds
  • 2 medium zucchini, trimmed and thinly sliced into 1/4-inch rounds
  • 3 large carrots, peeled and thinly sliced on the bias into 1/4-inch ovals
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons maple syrup
  • 1/2 cup vegetable broth
  • 1/4 cup walnuts, chopped
  • 2 sprigs fresh thyme, for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a bowl, mix sliced sweet potatoes, butternut squash, zucchini, and carrots with olive oil, salt, black pepper, and maple syrup.
  3. Arrange the vegetable slices upright in the baking dish in an alternating pattern.
  4. Carefully pour vegetable broth into the bottom of the dish without disturbing the vegetables.
  5. Cover with aluminum foil and bake for 40 minutes.
  6. Remove foil and bake for an additional 20-25 minutes until tender and caramelized.
  7. Before serving hot, sprinkle with walnuts and garnish with thyme.
