Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon pink gel food coloring
  • ½ teaspoon green gel food coloring
  • ½ teaspoon orange gel food coloring
  • ½ teaspoon purple gel food coloring
  • 1 cup powdered sugar, for coating
  • 48 assorted candy eyeballs

Instructions

  1. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  2. In a large mixing bowl, using an electric mixer, cream the softened unsalted butter and granulated sugar together on medium speed until light and fluffy, about 2-3 minutes.
  3. Beat in the large eggs one at a time, incorporating each egg completely before adding the next. Stir in the vanilla extract.
  4. Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just combined and a soft dough forms. Do not overmix.
  5. Divide the cookie dough evenly into four separate small bowls.
  6. Add the pink gel food coloring to the first bowl of dough and mix with a rubber spatula until the color is uniform. Repeat with the green, orange, and purple gel food colorings for the remaining three bowls of dough.
  7. Cover each bowl of colored dough with plastic wrap and refrigerate for at least 1 hour, or until firm enough to roll.
  8. Preheat oven to 350°F. Line two baking sheets with parchment paper. Place the powdered sugar in a shallow bowl.
  9. Remove one color of dough from the refrigerator. Scoop rounded tablespoons of dough and roll them into 1-inch balls.
  10. Roll each dough ball thoroughly in the powdered sugar until completely coated. Place the coated dough balls 2 inches apart on the prepared baking sheets. Repeat with the remaining colored doughs, baking one color at a time to prevent color bleed if using the same baking sheet.
  11. Bake for 8-10 minutes, or until the edges are set and the cookies are slightly puffed and crinkled, but still soft in the center.
  12. Immediately remove the baking sheets from the oven. While the cookies are still warm, gently press 1 to 3 candy eyeballs onto each cookie, varying sizes for a 'monster' effect.
  13. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire cooling rack to cool completely.
  14. Store cooled Monster Crinkle Cookies in an airtight container at room temperature.
