  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 cup pumpkin puree
  • 1 cup diced fresh pumpkin
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup sour cream
  • 2 tablespoons fresh cilantro, chopped
  • 1 fresh jalapeño, thinly sliced

Instructions

  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned, about 6-8 minutes. Drain any excess grease. Remove cooked beef from the pot and set aside.
  2. Add chopped yellow onion to the same pot and cook until softened, about 5 minutes. Add minced garlic, chili powder, ground cumin, smoked paprika, salt, and black pepper. Cook, stirring constantly, for 1 minute until fragrant.
  3. Return the browned ground beef to the pot. Stir in the diced tomatoes (undrained), kidney beans, cannellini beans, pumpkin puree, diced fresh pumpkin, and beef broth. Bring the mixture to a boil.
  4. Reduce heat to low, cover, and simmer for at least 30 minutes, or up to 1 hour, stirring occasionally, to allow the flavors to meld.
  5. Ladle the hot pumpkin chili into individual serving bowls. Top each serving with shredded sharp cheddar cheese, a dollop of sour cream, chopped fresh cilantro, and fresh jalapeño slices.
