- 1 pound ground beef
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 1 cup pumpkin puree
- 1 cup diced fresh pumpkin
- 2 cups beef broth
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup sour cream
- 2 tablespoons fresh cilantro, chopped
- 1 fresh jalapeño, thinly sliced
Instructions
- Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned, about 6-8 minutes. Drain any excess grease. Remove cooked beef from the pot and set aside.
- Add chopped yellow onion to the same pot and cook until softened, about 5 minutes. Add minced garlic, chili powder, ground cumin, smoked paprika, salt, and black pepper. Cook, stirring constantly, for 1 minute until fragrant.
- Return the browned ground beef to the pot. Stir in the diced tomatoes (undrained), kidney beans, cannellini beans, pumpkin puree, diced fresh pumpkin, and beef broth. Bring the mixture to a boil.
- Reduce heat to low, cover, and simmer for at least 30 minutes, or up to 1 hour, stirring occasionally, to allow the flavors to meld.
- Ladle the hot pumpkin chili into individual serving bowls. Top each serving with shredded sharp cheddar cheese, a dollop of sour cream, chopped fresh cilantro, and fresh jalapeño slices.
