- 2 pounds beef stew meat
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 large yellow onion
- 2 cloves garlic
- 3 large carrots
- 2 celery stalks
- 2 tablespoons tomato paste
- 1 cup dry red wine
- 3 cups beef broth
- 2 bay leaves
- 1/2 teaspoon dried thyme
- Fresh parsley for garnish
Instructions
- Toss beef stew meat with flour, salt, and black pepper until coated.
- Heat vegetable oil in a Dutch oven over medium-high heat. Brown beef in batches and set aside.
- In the same pot, sauté chopped onion, minced garlic, carrots, and celery for 8–10 minutes until softened.
- Stir in tomato paste; cook for an additional minute.
- Add red wine, deglazing the pot while bringing it to a simmer for about 2 minutes.
- Return browned beef to the pot; add beef broth, bay leaves, and thyme. Stir well.
- Simmer gently on low heat for about 2 hours or bake at 325°F (160°C) for 2–2.5 hours until tender.
- Before serving, remove bay leaves and garnish with chopped parsley.
