- 1 ½ pounds ground beef (80/20 lean)
- ½ cup plain breadcrumbs
- 1 large egg
- 1 (10.5 ounce) can condensed cream of mushroom soup
- 1 (10.5 ounce) can beef broth
- 1 (1 ounce) packet dry onion soup mix
- 1 tablespoon Worcestershire sauce
- 2 pounds russet potatoes, peeled and quartered
- ½ cup whole milk
- ¼ cup unsalted butter
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped, for garnish
Instructions
- In a large bowl, mix ground beef, breadcrumbs, egg, onion powder, garlic powder, black pepper, and Worcestershire sauce until combined. Form into 1 ½-inch meatballs.
- Place meatballs in a slow cooker.
- In another bowl, whisk together cream of mushroom soup, beef broth, dry onion soup mix, and Worcestershire sauce. Pour over meatballs.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until meatballs are tender.
- About 30 minutes before serving, boil peeled and quartered potatoes until fork-tender. Drain and mash with milk, butter, salt, and black pepper.
- Serve meatballs over mashed potatoes and garnish with parsley.
