- 1 pound ground turkey
- 1 large yellow onion, chopped
- 2 cloves garlic, minced
- 1 large sweet potato, peeled and diced into 1/2-inch cubes
- 1 (15 ounce) can pumpkin puree
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 1/2 cups chicken broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup plain Greek yogurt or sour cream
- 1 avocado, sliced
- 1 jalapeño, thinly sliced
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat olive oil in a large Dutch oven or pot over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add chopped yellow onion to the pot and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
- Stir in the diced sweet potato, pumpkin puree, diced tomatoes (undrained), rinsed and drained black beans, chicken broth, chili powder, ground cumin, smoked paprika, cayenne pepper, salt, and black pepper.
- Bring the chili to a boil, then reduce heat to low, cover, and simmer for at least 30 minutes, or up to 1 hour, stirring occasionally, until the sweet potatoes are tender and the flavors have melded.
- Ladle the hot chili into individual bowls. Top each serving with a dollop of plain Greek yogurt or sour cream, a few slices of avocado, jalapeño slices, and chopped fresh cilantro.
