  • 1/2 cup packed light brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup unsweetened almond milk
  • 1/2 cup vegetable oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F. Grease a 9-inch round cake pan and line it with parchment paper.
  2. In a saucepan, combine melted vegan butter, light brown sugar, and coconut milk. Cook until smooth and bubbling; pour into the prepared pan and top with chopped pecans.
  3. In a mixing bowl, whisk together flour, granulated sugar, light brown sugar, baking powder, baking soda, salt, and cinnamon.
  4. In another bowl, mix almond milk, vegetable oil, apple cider vinegar, and vanilla extract.
  5. Combine wet and dry ingredients until just mixed; pour batter over the pecan layer in the pan.
  6. Bake for 40-50 minutes until a skewer comes out clean. Cool for 10 minutes before inverting onto a serving plate.
